Recipe - Chicken and Broccoli Pasta

The Chicken and Broccoli Pasta Bake is the ideal meal when your short on time but you want a delicious meal. This can be eaten straight up or sprinkle bread crumbs and cheese into and bake in the oven. It is very adaptable; you can customise it to suit your taste or what you have on hand. If you don’t like broccoli, use something else. Peas or pumpkin would be good choices.

Prep: 10 mins - Cooking: 20 mins - Ready in: 30 mins
Makes: 10 serves - Cost : $20.44 or $2.04 each
 

Ingredients

  • 500 grams Chicken Thigh diced

  • 2 tablespoons Butter

  • 3 Garlic Cloves crushed

  • 1 cup Cream

  • 1 tsp Thyme

  • 2-3 cups Broccoli

  • 1 teaspoon Lemon Juice

  • 500 grams Pasta

  • 3/4 cup Cheese

Directions

  1. Cook pasta as per instructions

  2. Heat fry pan up, add butter and sauté garlic

  3. Add chicken cook until sealed

  4. Pour in cream, thyme and lemon juice

  5. Add broccoli and simmer until cooked

  6. Add cheese and pasta stir well until combined
