Recipe - Coconut Citrus Cake

Four ingredients is all you need to whip this cake up!

It’s quick and easy to prepare and is deliciously moist coconut cake, topped with a citrus cream cheese frosting which is a winner in our household.

It’s sweet, indulgent and a must make for any occasion.

Prep: 10 mins - Cooking: 45 mins - Ready in: 55 mins - Makes: 16serves - Cost : $7.81 or 48c each



  • 1 cup (95g) Coconut desiccated

  • 2 cups Milk

  • 1 cup S.R Flour

  • 1/2 cup Caster Sugar FROSTING

  • 2 tbsp (40grms) Butter

  • 6 tbsp (120 grams) Cream Cheese

  • 1 tbsp Orange Zest

  • 3 (360 grams) Icing Sugar


  1. Preheat oven 180°

  2. Place all ingredients (not frosting) in bowl and mix until combined

  3. Pour into lined baking tray or muffin trays

  4. Bake 45 mins, allow to cool before icing


  1. Add butter and cream cheese to bowl and mix until soft

  2. Add orange zest and icing sugar, mix until smooth
