Do you ever have those nights when someone asks ‘what’s for dinner’ and you have no idea, your looking for something quick and easy!
Those days are over now you have this recipe, frittatas are a lifesaver when it comes to feeding a crowd or the forever hungry kids.
So long as you have eggs, cheese and some veggies or meat you’ve got a meal.
If you don't have any feta, shredded cheese will do just fine, anything goes.

Ingredients
Oil for greasing
1 red Onion
100 grams Cheese shredded
200 grams Feta diced
20 eggs
250 grams Spinach leaves
350 grams Pumpkin diced
350 grams Sweet Potato diced 300 grams Potato diced
Directions
Preheat oven 180°
Grease baking tray.
Add eggs to bowl and mix well.
In another bowl add all other ingredients and mix until combined, tip into greased trays.
Pour eggs over mix in greased tray.
Bake for 30-40 mins, until brown and veggies are cooked, allow to cool.
Tips
Use whatever veggies you have on hand.
Pasta can be used in place of or as well as potatoes to bulk up
