Got leftover rice from the night before, why not turn it into fried rice!!!
An oldie but a goodie, a household favourite.
This fried rice uses leftovers, it is insanely satisfying and takes no time at all to whip up.
Easy to customise with your favourite add ins and the best part is you can adjust your recipe to whatever you have on hand.
Prep time: 10 minutes - Cooking time: 30 minutes - Ready in: 40 minutes Makes: 9 serves - Cost: $16:15 or $1.79 per serve
Ingredients
1 tablespoon Oil
2 cups Rice
250 grams Bacon diced
4 Eggs beaten
1 tablespoon Garlic minced
1/2 tablespoon Ginger minced
2 cups Frozen Peas, Corn & Carrots
1/2 cup Soy Sauce
1/4 cup Parsley diced
Sprinkle of Sesame Seeds
Salt & Pepper to taste
Directions
Boil Rice until cooked, drain and leave to cool.
Heat fry pan or wok up and add 1/2 the oil.
Add beaten eggs and swirl over base, once partly cooked use spatula to score horizontally and vertically to make squares.
Gently stir until eggs cooked and transfer into separate bowl.
Heat pan up again add oil, bacon, garlic, ginger cook for 4 minutes.
Add frozen vegetables and mix well until cooked.
Add rice, eggs, sesame seeds, soy sauce and parsley, stir well.
Serve and freeze some for later.
