Recipe - Lemon Coconut Slice

This by far is one of the most popular slices… everyone loves it.

New and improved no-bake lemon coconut slice recipe is absolutely perfect and bonus can be frozen for an easy grab smoko or lunch box filler.

A beauty tangy base made with sweetened condensed milk and crushed biscuits then topped with a creamy frosting… there’s a reason this is one of the most popular recipes!

Ingredients


BASE

  • 80 grams Butter

  • 250 grams Condensed Milk

  • 250 grams Sweet Biscuit - Nice

  • 90 grams Coconut Desiccated

  • Zest & Juice from 1 Lemon

LEMON FROSTING

  • 360 grams Icing Sugar

  • 90 grams Butter soften

  • 75 mls Lemon Juice

  • 20 grams Coconut Desiccated

Directions

BASE

  1. Line tray with baking paper

  2. Crush biscuits and place into a bowl

  3. Add coconut and grated lemon rind and mix well

  4. Add soft butter, condensed milk and lemon juice to the biscuit mix. Mix until combined.

  5. Press into tin and place into freezer to set

FROSTING

  1. In bowl add icing sugar, butter and lemon juice and mix until combined.

  2. Spread the frosting over the slice, sprinkle with coconut.
