Recipe - One Pot Pasta

After a long day of running around, this recipe is super delicious, easy and quick to put together which makes it a perfect meal for the busy family.

The basic idea is you cook ingredients for a sauce along with the dry pasta, so everything cooks together in one pot and is it’s all done at the same time. I like that, as it can be served straight from the pot and reduces your dishes and clean up time. Sprinkle with cheese and it’s super yummy. You can easily customise the recipe too - swapping out chicken for other meats, bulking up with vegetables. Bonus get the kids out of your hair by asking them to pick the tomatoes from the garden, this will keep them entertained while you whip this one up. If your family loves pasta this is a must try…

Makes: 8 adult size serves - Cost: $23.87 or $2.98 per serve


One Pot Pasta


Ingredients

  • 1 tbsp Oil

  • 400 grams Chicken sliced

  • 1 Onion diced

  • 1 tsp Garlic minced

  • 250 grams Pasta your favourite

  • 4 cups Water

  • 2 tbsp Chicken Stock

  • 150 grams Basil Pesto

  • 1/3 cup Cream

  • 80 grams Spinach Leaves

  • 250 grams Cherry Tomatoes halved

  • 1 cup Cheese

Directions

  1. Heat oil in pot, add chicken and brown on high

  2. Reduce heat to medium, add onion, garlic cook for 2 mins

  3. Add pasta, water, chicken stock and bring to boil

  4. Simmer until pasta has cooked and liquid nearly disappeared

  5. Add cream, Pesto, tomato, spinach cook until spinach starts to wilt

  6. To serve, sprinkle with cheese & eat, or freeze for lunch box fillers or extra meals.

Tips
