Recipe - Satay Chicken

This satay chicken is sure to be a family favourite, so tasty and super easy to make. This totally delicious satay chicken recipe uses cupboard staple ingredients loaded up with peanut butter, coconut cream and your favourite rice and veggies.

You can also substitute the chicken for beef or tofu.

When it hits the stove, the smell is SO GOOD you will just know it is going to taste amazing and be a filling meal for all those hungry tummies.

Ingredients


  • 1 tablespoon Oil

  • 500 grams Chicken breast diced

  • 400 ml Coconut Milk

  • 2 Chicken Stock cubes

  • 2 tablespoon Crunchy Peanut Butter

  • 1 tablespoon Golden Syrup

  • 2 tablespoon Sweet Chilli Sauce

  • 2 cups Beans (we used frozen)

  • 1 Red Capsicum

  • 2 cups Rice

Directions

  1. Heat oil in pan add chicken and cook until brown

  2. Add rest of ingredients stir well

  3. Simmer for 2 mins

  4. Serve with rice (cook rice as per packet instructions) And that's how simple this delicious meal is!
