Recipe - Vegetable Risotto

This Risotto makes the perfect weeknight meal.

When you need something incredibly satisfying and comforting in a hurry.

Risotto is a rice based dish that you can add your favourite vegetables and meat to bulk up an all time fav. A quick easy go to recipe that the family will love.

Prep time: 10 min - Cooking time : 20 min - Ready in: 30 min

Makes: 5 serves - Cost : $6.03 or $1.20 per serve


  • 1 kg Frozen Vegetable

  • 4 cups Water

  • 50 grms Butter

  • 1 Onion

  • 1 tbls Garlic

  • 1 1/2 cups Aborio Rice

  • 1/3 cup Parmesan Cheese

  • 4to 5 cups Water boiling

  • 2 tablespoons Vegetable Stock

  • Salt & Pepper to taste


  1. Heat butter in fry pan.

  2. Add garlic and onion fry until soft.

  3. Add rice and stock, cook while stirring for 1 minute.

  4. Reduce heat, add 1 cup of water at a time stirring until liquid has dissolved.

  5. Repeat with remaining water until Rice is cooked.

  6. Add frozen vegetables cook until vegetables are hot.

  7. Stir in cheese and serve.
