Recipe - Vegetable Risotto
This Risotto makes the perfect weeknight meal.
When you need something incredibly satisfying and comforting in a hurry.
Risotto is a rice based dish that you can add your favourite vegetables and meat to bulk up an all time fav. A quick easy go to recipe that the family will love.
Prep time: 10 min - Cooking time : 20 min - Ready in: 30 min
Makes: 5 serves - Cost : $6.03 or $1.20 per serve
1 kg Frozen Vegetable
4 cups Water
50 grms Butter
1 tbls Garlic
1 1/2 cups Aborio Rice
1/3 cup Parmesan Cheese
4to 5 cups Water boiling
2 tablespoons Vegetable Stock
Salt & Pepper to taste
Heat butter in fry pan.
Add garlic and onion fry until soft.
Add rice and stock, cook while stirring for 1 minute.
Reduce heat, add 1 cup of water at a time stirring until liquid has dissolved.
Repeat with remaining water until Rice is cooked.
Add frozen vegetables cook until vegetables are hot.
Stir in cheese and serve.
