Recipe - Mini Quiches

Today we made Mini Quiches. These are such a quick and easy snack or lunchbox filler. We just used Bacon and Cheese as our ingredients to keep them very child friendly, but you can add any fillings that you’d like or to use or utilise any vegetables that are going bad in the back of your fridge.

Ingredients 1 cup Cheese grated

4 Bacon rashers diced

6 Eggs whisked

2 tbl Milk

Salt & Pepper to taste

Tips

Substitute any ingredients to suit your family e.g., chicken, ham, salami, carrot, onion, spinach, capsicum, feta cheese.

Directions

  1. Preheat oven to 180°.

  2. Grease muffin trays.

  3. Whisk egg, milk, salt & pepper together.

  4. Add bacon & cheese to greased muffin trays.

  5. Fill muffin trays 3/4 full of egg mix.

  6. Bake for 20-30 minutes or until golden.

Eat straight away or freeze for lunch box fillers.
